45 Jermyn Street
Cuisinequip’s Steve Elliott worked with Fortnum & Mason’s Executive Head Chef Sydney Aldridge to develop the bespoke range for the 45 Jermyn Street restaurant. At its centre are 8 x 8kw induction zones in an ergonomic design to allow for the maximum number of free flowing workstations in this busy kitchen.
The bespoke range, measuring 3.2m x 2m is the heart of the kitchen and provides the platform for the majority of the prime cooking and finishing for the restaurant. It also incorporates a Valentine EVO 2525 Turbo fryer with pumped oil filtration. There is five years warranty on the induction system, backed by Cuisinequip service.
Putting the Chips Down in Healthy Fries at Juicy Lucy’s
Valentine Equipment can say that chips remain a firm favourite in eateries all over the UK, especially with the growing trends for gourmet burgers and fries cooked in high quality, healthier oils.
Whether it is a triple cooked chip, nice frites to go with steak and chips, popular opinion amongst the chefs suggest that a fryer is essential to produce the right quality and quantity within the right time-scale.
Juicy Lucy’s Burger Company, a pioneering hand-made burger and fries venture in Glasgow, is one of Valentine’s recent clients that has looked hard at their food offer including the humble chipped potato and found that great ingredients and the best frying equipment really do make a difference in quality, taste, cooking time and profitability.
The fries at Juicy Lucy’s are hand cut from selected potatoes and double cooked in a Valentine EVO 2200 Computer Lift fryer using a high quality, healthy rapeseed oil, and as the company’s founder Iain Pickering explains this is all crucial to the business’s success, “We’ve focussed on a niche to provide a great quality hand-made burger, fries at value for money from £6.79, closer to multi-national burger groups in price, but much better quality, and below the prices of many gourmet burger operations that may approach £15 for the burger and fries.
“The chips were tested in several types of fryer from a number of manufacturers and after trialling Valentine’s Evo we found that their ability to deliver that consistent taste and texture of fries really stood out. We are producing between 2-3,000 portions of fries per week and Valentine’s fryers stand-up to this with no problem.
Talking about the need for quality equipment to produce great chips and the most recent trends that will carry through into 2017, Kenan Koymen, business development manager for Valentine Equipment says, “Our clients like Juicy Lucy’s are meeting a growing consumer demand for fantastic quality chips that deliver on taste, but are cooked in healthy oils and quickly at high temperatures to absorb less oil. Cuisinequip at heart of kitchens for Polpo
The bespoke cooking solution for Polpo Chelsea that Cuisinequip and Valentine helped to deliver has also been launched at Polpo in Brighton. The project comes from Polpo Group’s experience and the vision of Executive Chef Jason Wass in choosing equipment from Cuisinequip and sister company to Valentine Equipment.
Cuisinequip’s team has delivered built-in cooking equipment with two twin induction hobs, a 450mm deep pan griddle, bain-marie and a Valentine Evo 2200 twin pan fryer following the successful formulae designed by Jason Wass.
Explaining the evolution of the induction range at Polpo, Jason Wass says, “We needed a cooking range that took the best points from existing Polpo restaurants, that could fit into the limited space of our new Chelsea site and of course to cope with a diverse menu, 24 hour operation and still produce the high quality dishes we are known for.”
The range at Polpo Chelsea has a built-in twin-pan Valentine Evo 2200 fryer, two twin induction hobs with four x 8kw multifunction coils to allow for cooking with smaller pans at service time, or larger pans for mise en place. Hold function is standard on this type of induction from HWM keeping the base of the pan at the set temperatures of 70, 95 or 110°C; thereafter the control becomes a graduated power until full power is delivered at position 9. All Cuisinequip’s HWM built cooking ranges have a strong 4.5mm stainless steel top and are fully welded for longevity, backed up by a five year warranty on the induction system from Cuisinequip.
